Fresh flour tastes different because the whole grain is opened moments before baking. Aroma, oils and bran character are still present, which gives bread and pastry a fuller grain flavour.

Wholegrain fresh flour often absorbs more water than white flour. Let dough rest, adjust hydration gradually and expect a more characterful crumb.
Mill only what you need
The simplest rule is also the best: store whole grain, mill flour shortly before use, and keep any leftover flour cool and sealed.
