Wholegrain Oat Biscuits

Fresh flour recipe

Crisp everyday biscuits with fresh oat flour and a little brown sugar.

Milling note

Fresh oat flour can clump slightly. Sieve it once after milling if you want a neater biscuit.

Ingredients

  • 140 g freshly milled oat flour
  • 80 g rolled oats or fresh oat flakes
  • 80 g butter, melted
  • 70 g soft brown sugar
  • 1 tbsp golden syrup
  • 1/2 tsp bicarbonate of soda
  • Pinch of salt

Method

  1. Heat the oven to 180 C and line two trays.
  2. Mix oat flour, oats, bicarbonate of soda and salt.
  3. Stir melted butter, sugar and golden syrup together, then combine with the dry mix.
  4. Roll into walnut-sized balls and flatten slightly.
  5. Bake for 10 to 12 minutes until the edges are golden.
  6. Leave on the tray until firm, then cool on a rack.
