Fresh flour recipe
Chewy oat biscuits with dried figs, honey and a crisp edge. Useful when you want something sweet without making a cake.
Milling note
Mill oats medium-fine, or pulse fresh flakes briefly. A little texture keeps the biscuits chewy.
Ingredients
- 120 g freshly milled oat flour
- 90 g desiccated coconut
- 80 g dried figs, finely chopped
- 2 egg whites
- 70 g runny honey
- 30 g caster sugar
- Pinch of salt
Method
- Heat the oven to 170 C and line a baking tray.
- Mix oat flour, coconut, figs and salt.
- Whisk egg whites until foamy, then whisk in honey and sugar.
- Fold the wet mixture into the dry ingredients.
- Scoop small mounds onto the tray and press lightly.
- Bake for 14 to 16 minutes until golden at the edges.
- Cool on the tray for 10 minutes before moving.
