Oat and Fig Macaroons

Fresh flour recipe

Chewy oat biscuits with dried figs, honey and a crisp edge. Useful when you want something sweet without making a cake.

Milling note

Mill oats medium-fine, or pulse fresh flakes briefly. A little texture keeps the biscuits chewy.

Ingredients

  • 120 g freshly milled oat flour
  • 90 g desiccated coconut
  • 80 g dried figs, finely chopped
  • 2 egg whites
  • 70 g runny honey
  • 30 g caster sugar
  • Pinch of salt

Method

  1. Heat the oven to 170 C and line a baking tray.
  2. Mix oat flour, coconut, figs and salt.
  3. Whisk egg whites until foamy, then whisk in honey and sugar.
  4. Fold the wet mixture into the dry ingredients.
  5. Scoop small mounds onto the tray and press lightly.
  6. Bake for 14 to 16 minutes until golden at the edges.
  7. Cool on the tray for 10 minutes before moving.
