Fresh flour recipe
Crisp everyday biscuits with fresh oat flour and a little brown sugar.
Milling note
Fresh oat flour can clump slightly. Sieve it once after milling if you want a neater biscuit.

- 140 g freshly milled oat flour
- 80 g rolled oats or fresh oat flakes
- 80 g butter, melted
- 70 g soft brown sugar
- 1 tbsp golden syrup
- 1/2 tsp bicarbonate of soda
- Pinch of salt
Method
- Heat the oven to 180 C and line two trays.
- Mix oat flour, oats, bicarbonate of soda and salt.
- Stir melted butter, sugar and golden syrup together, then combine with the dry mix.
- Roll into walnut-sized balls and flatten slightly.
- Bake for 10 to 12 minutes until the edges are golden.
- Leave on the tray until firm, then cool on a rack.
